Whether you're feeding a crowd or just looking for a hearty breakfast to enjoy all week long, this Amish Breakfast Bake is sure to satisfy!
Ingredients
- 1 pound sliced bacon, diced
- 1 medium sweet onion, chopped
- 9 large eggs, lightly beaten
- 4 cups frozen shredded hashbrown potatoes, thawed
- 2 cups cheddar cheese, shredded
- 1 1/2 cups small curd cottage cheese
- 1 1/4 cups Swiss cheese, shredded
- fresh chives, chopped, optional, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -Heat a large skillet over medium-high heat.
Step 4 -Add the bacon and the onion to the hot skillet and cook, stirring, until the bacon is browned, about 10 minutes.
Step 5 -Transfer the bacon and the onion to a large bowl.
Step 6 -Stir in the eggs, the potatoes, the cheddar cheese, the cottage cheese, and the Swiss cheese.
Step 7 -Pour the mixture into the prepared baking dish.
Step 8 -Bake until the eggs are set and the cheese is melted, about 45-50 minutes.
Step 9 -Transfer the casserole from the oven and let it sit for 10 minutes.
Step 10 -Serve garnished with the chives.
