Black-Eyed Pea Salsa might just be the easiest snack ever invented. Just mix everything in a bowl, let the flavors meld together, and that’s it! You have a hearty, spicy, bright, and vibrant salsa ready for tortilla chips! Or for topping burritos! Or for mixing into a casserole! There’s no limit to what you can do with Black-Eyed Pea Salsa!
Ingredients
- 3/4 cup canned black-eyed peas, rinsed and drained
- 2 cups tomatoes, chopped
- 1 cup corn, rinsed and drained
- 1 tablespoon jalapeno chile, optional, minced
- 1 tablespoon lime juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- cilantro, optional, to taste
Directions
Step 1 -Mix together all of the ingredients in a large bowl.
Step 2 -Set the salsa aside to allow the flavors to develop for 20-30 minutes.
Step 3 -Serve.
