Ingredients
- 1 1/2 cups unsalted butter
- 1 1/4 cups light or dark brown sugar, packed
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3 cups all-purpose flour, sifted
- 1/4 cup granulated sugar
Directions
Step 1 -In a medium saucepan over medium-low heat, add the butter and cook, stirring or swirling occasionally, until the butter particles at the bottom of the pan have turned a dark brown and the melted butter on the top is light brown. The melted butter should have a nutty smell, but be careful not to let it burn.
Step 2 -Transfer the browned butter from the stovetop to the refrigerator, until the butter solidifies.
Step 3 -Preheat the oven to 350 degrees F.
Step 4 -Line three 18x26-inch baking sheets with parchment paper.
Step 5 -In a large bowl of an electric stand mixer, add the solidified browned butter (including the dark particles) and the brown sugar and beat on high speed until light and fluffy, with maybe a few brown sugar chunks remaining, about 5 minutes.
Step 6 -Using a spatula, scrape down the sides of the bowl.
Step 7 -With the mixer on low speed, add the eggs, the vanilla extract, the baking powder, and the salt to the browned butter mixture and beat until well-combined.
Step 8 -Slowly add the flour to the browned butter mixture and beat until the mixture is smooth.
Step 9 -In a small bowl, add the granulated sugar.
Step 10 -Use a 1 1/2-tablespoon cookie scoop to portion out the cookie dough. Roll each scoop of dough into a ball and then roll each ball of dough into the granulated sugar to completely coat.
Step 11 -Transfer the sugar-coated cookie dough balls to the prepared baking sheets.
Step 12 -Using the bottom of a drinking glass, press the dough balls into flat 1/2-inch disks.
Step 13 -Transfer the cookies to the oven and bake until the edges are golden and the center is just under-baked, about 8-10 minutes.
Step 14 -Transfer the baked cookies from the oven to a wire rack and let cool.
Step 15 -Plate and serve.
