If peach cobbler makes you feel rather peachy, well then, these Cobbler Cookies are definitely going to have the same effect! Imagine biting into that golden, fluffy, and sweet cobbler goodness you love so much without having to use any type of utensil! What a dream, eh?! This preparation makes it so that Cobbler Cookies can basically be eaten anywhere! Your favorite, peach-filled treat can be there to delight you no matter where you are! How fun?!
Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1/3 cup brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 3 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 cup fresh peaches, peeled and chopped
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line two baking sheets with parchment paper.
Step 3 -In a large bowl, add the butter, the sugar, and the brown sugar and use an electric hand mixer to beat until light and fluffy, about 5-7 minutes.
Step 4 -Add the egg, the vanilla extract, and the almond extract to the butter mixture and beat to combine.
Step 5 -In a medium bowl, add the flour, the cinnamon, the cream of tartar, the baking soda, the salt, and the nutmeg and whisk to combine.
Step 6 -Adjust the mixer to low speed and gradually add the flour mixture to the butter mixture, beating continuously to combine.
Step 7 -Add the peaches to the cookie dough and mix gently with a spatula to combine.
Step 8 -Drop the cookie dough by the tablespoonful, spaced 2 inches apart, onto the prepared baking sheets.
Step 9 -Bake the cookies until set, about 14-16 minutes.
Step 10 -Allow the cookies to cool on the sheets for 2 minutes.
Step 11 -Transfer the cookies to wire racks to cool completely.
Step 12 -Store the cookies in an airtight container until ready to serve.
Step 13 -Serve.
