Ingredients

  • 3 cups romaine lettuce, chopped
  • 3 cups fresh spinach
  • 3 large Roma tomatoes, diced
  • 2 (11-ounce) cans whole kernel corn with red and green peppers, drained
  • 2 cups chicken, cooked, shredded or diced
  • 1 1/2 cups Colby-Jack cheese, shredded
  • 3/4 cup salsa
  • 3/4 cup French dressing
  • 2 tablespoons fresh cilantro, chopped
  • 2 green onions, chopped
  • 1 1/2 cups Southwest tortilla strips or chips

Directions

Step 1 -In a large bowl, layer 1/2 of the lettuce and 1/2 of the spinach.

Step 2 -Layer in the tomatoes, the corn, the chicken, the remaining lettuce, and the remaining spinach.

Step 3 -Top the spinach with the cheese.

Step 4 -In a small bowl, mix the salsa and the French dressing together.

Step 5 -Pour the dressing mixture over the top of the cheese.

Step 6 -Garnish the salad with the cilantro, the green onions, and the tortilla strips.

Step 7 -Serve.
