A great cookout isn't just about the burgers and chicken. You need a great side dish to go with all that. Enter the Favorite Sweet Potatoes! These caramel-y sweet wedges are grilled until crisp on the outside and fluffy on the inside. Coated in zesty seasonings and topped with fragrant cilantro, Favorite Sweet Potatoes will be the star of the summer!
Ingredients
- 1 pound sweet potatoes, cut into 3/4-inch-thick wedges
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
- 1 teaspoon Old Bay® seasoning
- cilantro, optional, to taste, chopped, for garnish
Directions
Step 1 -Preheat the grill to medium-high heat, about 375-450 degrees F.
Step 2 -Fill a grill-proof pot with water, place it on the grill, and allow it to heat until it is boiling.
Step 3 -Add the sweet potatoes to the boiling water and cook them until they can just be pierced with a paring knife, but they still feel firm and hold their shape, about 5 minutes.
Step 4 -Drain the sweet potatoes in a colander and allow them to cool slightly.
Step 5 -In a bowl, add the sweet potatoes, the olive oil, the salt, and the Old Bay seasoning and toss gently to combine.
Step 6 -Place the sweet potato wedges directly on the grill grates and cook, flipping them once, until char marks form, about 3-5 minutes per side.
Step 7 -Serve the sweet potatoes garnished with the cilantro.
