Ingredients

  • 2 1/2 cups sugar
  • 1 (3-ounce) package lemon gelatin
  • 1 (3-ounce) package pineapple gelatin
  • 4 cups water, boiling, plus 10 cups cold water, divided
  • 1 (12-ounce) can frozen pineapple juice concentrate, thawed
  • 1 cup lemon juice
  • 1 (0.23-ounce) envelope unsweetened lemonade mix
  • 2 liters ginger ale, chilled
  • lemon slices, optional, to taste, for garnish

Directions

Step 1 -In a large container, add the sugar, the lemon gelatin, the pineapple gelatin, and 4 cups of the boiling water and stir to combine until the sugar and the gelatins are dissolved.

Step 2 -Add the pineapple juice concentrate, the lemon juice, the lemonade mix, and the remaining cold water and stir to combine.

Step 3 -Cover the container and freeze it, stirring the beverage mixture every 15-30 minutes, until it is just frozen, about 2-3 hours.

Step 4 -Transfer the container from the freezer about 1 hour prior to serving.

Step 5 -Stir the beverage mixture until it becomes a slushy-like consistency.

Step 6 -In a punch bowl, add 1/2 of the beverage mixture and 1 liter of the ginger ale and stir to combine.

Step 7 -Add the remaining beverage mixture and the remaining ginger ale and stir to combine.

Step 8 -Serve garnished with the lemon slices.
