If you're a coffee lover, we've found something new for you to love. This Icebox Coffee Cake is perfect for your next dessert wake up call. The creamy chocolate-coffee pudding combo, layered atop the crunchy, cinnamon-y graham crackers with the foamy whipped cream brews up the perfectly lively coffee-loving dessert you've been longing for. Don't let the same old dessert grind get you down; get yourself a cup, ahem, we mean, a plate with a slice of our Icebox Coffee Cake for your post-dinner pick-me-up. When you're a coffee aficionado, we understand the love for that aromatic flavor in any form. So, go on, espresso yourself... because it's good all the way to the last drop, ahem, we mean piece, it's good to the last chocolatey piece. You and your cup o' Joe will definitely be going back for a double shot!
Ingredients
- 15 cinnamon graham crackers, whole
- 2 (8-ounce) packages cream cheese, softened
- 3 (3.9-ounce) packages instant chocolate pudding mix
- 2 tablespoons instant coffee granules
- 1 teaspoon ground cinnamon, divided
- 2 1/2 cups 2% milk
- 1 cup brewed coffee, cold, strong
- 8 cups whipped cream, sweetened
- 3 tablespoons chocolate sprinkles
Directions
Step 1 -Grease a 9x13-inch baking dish.
Step 2 -Add half of the whole cinnamon graham crackers to the bottom of the prepared baking dish, breaking the crackers as needed to fit.
Step 3 -In a large bowl with a blender, add the softened cream cheese, the instant chocolate pudding mix, the instant coffee granules, and 1/4 teaspoon of the ground cinnamon, mixing until blended.
Step 4 -Gradually add the milk and the cold brewed coffee to the pudding mixture and mix until smooth.
Step 5 -Add 4 cups of the sweetened whipped cream to the pudding mixture and fold to combine.
Step 6 -Spread half of the pudding mixture overtop the cinnamon graham cracker layer.
Step 7 -Repeat the cinnamon graham cracker layer and the pudding layer.
Step 8 -Top the final layer with the remaining sweetened whipped cream.
Step 9 -Tightly cover the cake and transfer to the refrigerator to chill for at least 8 hours and up to overnight.
Step 10 -Before serving, add the chocolate sprinkles and the remaining ground cinnamon to the top of the whipped cream layer.
Step 11 -With a sharp knife, cut the cake into single serving-sized pieces, plate, and serve.
