This is brunch with a style icon's impeccable approach! Jackie O's Waffles are fluffy Belgian-style waffles cooked just right, then topped with an amazing bananas Foster-like sauce for that classy, presidential touch. With a dollop of freshly made whipped cream, your guests will be swooning over the delicious, homemade goodness and decadence of Jackie O's Waffles. She had great taste and you can taste it!
Ingredients
- 1 1/3 cups all-purpose flour
- 3/4 teaspoon baking soda
- 2 teaspoons baking powder
- 2 teaspoons granulated sugar
- 1/4 teaspoon salt
- 3 eggs
- 3 3/4 teaspoons vanilla extract, divided
- 1 1/3 cups milk
- 1/3 cup butter, melted, plus 1/4 cup butter, room temperature, divided
- 2/3 cup brown sugar
- 2 teaspoons rum-flavored extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup whole pecans
- 1/2 cup maple syrup
- 3 bananas, cut into 1/2-inch slices
- 1 cup heavy cream
- 1 tablespoon confectioners' sugar
Directions
Step 1 -Preheat a Belgian waffle iron.
Step 2 -In a large bowl, add the flour, the baking soda, the baking powder, the granulated sugar, and the salt and whisk to combine.
Step 3 -In a separate large bowl, add the eggs, 1 1/2 teaspoons of the vanilla extract, and the milk and whisk to combine.
Step 4 -Add the 1/3 cup of melted butter and the flour mixture to the egg mixture and stir until a slightly lumpy batter forms. Be careful not to overmix.
Step 5 -One waffle at a time, evenly pour the batter mixture into the prepared waffle iron and cook until steam stops coming out of the seam, about 2 minutes.
Step 6 -Transfer the cooked waffle to a plate and keep it warm.
Step 7 -Continue the cooking process until all the batter is used. Make sure to keep the waffles warm.
Step 8 -In a large saucepan over medium heat, melt the remaining room temperature butter.
Step 9 -Add the brown sugar, the rum extract, 2 teaspoons of the vanilla extract, and the cinnamon to the melted butter and cook, while stirring constantly, until the mixture comes to a simmer.
Step 10 -Add the pecans to the sauce mixture and cook, while stirring constantly, until the pecans are coated completely, about 1 minute.
Step 11 -Add the syrup and the bananas to the sauce mixture and cook, while stirring constantly, until the bananas soften, about 4 minutes.
Step 12 -In a medium bowl, add the heavy cream, the remaining vanilla extract, and the confectioners' sugar and with an electric mixer on low speed, begin to beat.
Step 13 -Slowly increase the mixer to high speed, and beat until firm peaks form.
Step 14 -Serve the waffles topped with the sauce mixture and the whipped cream.
