Crunch into a new twist on a classic Caesar salad! Kale Caesar Salad has a fresh garden flavor that is deeper than traditional Caesar salads and is topped with crispy chickpeas for a unique texture and added heartiness. You can whip up a Kale Caesar Salad in a hurry and it's a healthy lunch option that doesn’t skimp out on flavor! Nothing beats that tangy, creamy Caesar dressing!
Ingredients
- 2 tablespoons olive oil, divided
- 1 (15-ounce) can chickpeas, rinsed and drained
- salt, to taste
- pepper, to taste
- 4 cups fresh kale, stems removed and chopped
- 1 tablespoon lemon juice
- 4 cups romaine lettuce, chopped
- 1/4 cup parmesan cheese, grated
- Caesar salad dressing, to taste, store-bought or homemade
Directions
Step 1 -Heat 1 tablespoon of the olive oil in a skillet over medium-high heat.
Step 2 -Add the chickpeas to the skillet and season with the salt and the pepper.
Step 3 -Roast the chickpeas until golden-brown, stirring frequently to avoid burning.
Step 4 -Remove the chickpeas from the heat and set them aside.
Step 5 -Place the kale, remaining olive oil, the lemon juice, and the salt into a large mixing bowl.
Step 6 -Massage the kale with your hands to soften it.
Step 7 -In a large salad bowl, combine the kale, the romaine lettuce, the parmesan cheese, and the Caesar dressing.
Step 8 -Top with the crispy chickpeas and serve.
