The bearded sixteenth president was as American as it gets given one of his favorite desserts was the juicy, sweet apple pie. Well, knowing this, we wanted to honor him with a sugary treat we call Lincoln's Bread Pudding. It's layered with warm, tender Granny Smith apples topped with melty butter, rich spices, and a little bit of breadcrumbs for the perfect crunch. To add a little more sweetness, there's a rich cream sauce poured all over. A treat fit enough for a leader and humble enough for your own table. That's Lincoln's Bread Pudding, for ya!
Ingredients
- For the bread pudding:
- 12 small Granny Smith apples, peeled, cored, and sliced thin
- 1 large lemon, juiced
- 1 teaspoon lemon zest
- 1 teaspoon nutmeg
- 1 1/4 cups brown sugar
- 1/4 cup unsalted butter, cut into small chunks, plus more for greasing
- 1 cup breadcrumbs
- For the cream sauce:
- 1 pint heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon nutmeg
- 1 teaspoon almond extract
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x3-inch baking dish with unsalted butter.
Step 3 -Place the apples in a large bowl and cover them with the lemon juice, the lemon zest, and the nutmeg and toss with a spatula until the apples are evenly coated.
Step 4 -Pour 1/3 of the apples in the prepared baking dish in an even layer, ensuring the entire surface is covered.
Step 5 -Sprinkle the apples with 1/3 of the brown sugar, then 1/3 of the butter cubes, and 1/3 of the breadcrumbs.
Step 6 -Repeat the layers, starting with the apples and ending with the breadcrumbs.
Step 7 -Bake the bread pudding until the edges are brown, the pudding is cooked through, and the apples are soft, about 50 minutes-1 hour.
Step 8 -While the bread pudding is baking, in a small pot over medium heat, add the heavy whipping cream, whisking it occasionally as it warms, and bring it to a boil.
Step 9 -Whisk the powdered sugar, the nutmeg, and the almond extract into the boiling heavy cream.
Step 10 -Transfer the sauce from the heat and strain the sauce through a mesh strainer into a serving dish.
Step 11 -Pour the sauce over the warm bread pudding.
Step 12 -Serve immediately.
