If you're hosting a pretty, little lunch, then you need a pretty, little treat to tie things up with. As the ladies are finishing off their tea sandwiches, they'll be strolling over to the dessert table to nibble on some of this Molded Strawberry Salad. They'll love it because there will be sweet, fruity flavors that'll remind them of what their mothers once made. They'll be equally amazed by just how perfect this squared version is for serving at quaint social events. Best believe it, this Molded Strawberry Salad will certainly be the center of any soirée that it is served at!
Ingredients
- 1 (6-ounce) package strawberry gelatin
- 1 1/2 cups boiling water
- 10 ounces packaged frozen sweetened sliced strawberries, thawed
- 1 (8-ounce) can unsweetened crushed pineapple
- 1 cup sour cream
- leaf lettuce, to taste, for garnish
- fresh strawberries, to taste, for garnish
Directions
Step 1 -Coat a 9-inch square pan with nonstick spray.
Step 2 -In a large, heat-safe bowl, add the gelatin and the boiling water and stir until the gelatin has dissolved.
Step 3 -Add the thawed strawberry slices and the pineapple to the gelatin mixture.
Step 4 -In a second large bowl, strain the fruit mixture, keeping the liquid and the fruit separated.
Step 5 -Reserve 1 cup of the liquid and let it sit at room temperature.
Step 6 -Pour the fruit mixture and the remaining liquid into the prepared pan. Cover and refrigerate until it is set, about 1 hour.
Step 7 -In a medium bowl, add the sour cream and the reserved 1 cup of liquid and whisk to combine.
Step 8 -Pour the topping over the gelatin and spread it out.
Step 9 -Cover the baking dish and refrigerate the strawberry salad until it has set.
Step 10 -Cut the strawberry salad into squares.
Step 11 -Garnish with the lettuce and the fresh strawberries and serve.
