Parmesan Pork Tenderloin is a step above all the other tenderloin recipes out there. The reason? Well, it's in the name. The rosy, tender pork is generously coated with lots of nutty parmesan cheese–that's the real game-changer. Paired with some tender veggies, they all soak in a deliciously seasoned beef broth-wine bath, and that's when your tastebuds will rejoice even more. Sliced and served with the mouth-watering sauce, Parmesan Pork Tenderloin is the perfect flavorful, savory selection for your weeknight main course!
Ingredients
- 1 (.75-pound) pork tenderloin, cut into 1/2-inch slices and flattened to 1/8-inch thickness
- 6 tablespoons parmesan cheese, grated
- 1 small sweet onion, sliced and separated into rings
- 1 1/2 cups fresh mushrooms, sliced
- 1 clove of garlic, minced
- 2 teaspoons butter, divided
- 2 teaspoons olive oil, divided
- 1/4 cup beef broth, reduced-sodium
- 2 tablespoons port wine or additional beef broth
- 1/8 teaspoon salt, optional
- 1/8 teaspoon dried basil, crushed
- 1/8 teaspoon dried thyme, crushed
- 1/8 teaspoon rosemary, crushed
- pepper, to taste
- 1/2 teaspoon cornstarch
- 3 tablespoons water
Directions
Step 1 -Coat the pork generously with the parmesan cheese; set aside.
Step 2 -In a large skillet, over medium heat, sauté the onion, mushrooms, and garlic in 1 teaspoon of butter and 1 teaspoon of oil until tender.
Step 3 -Transfer the veggies out of the skillet and keep warm.
Step 4 -In the same skillet, cook the pork in the remaining butter and remaining oil (in batches) until the juices run clear and the pork reaches 145 degrees F, about 2 minutes on each side.
Step 5 -Transfer the pork out of the skillet and keep warm.
Step 6 -Add the beef broth to the skillet, scraping to loosen up the brown bits.
Step 7 -Stir the wine into the broth.
Step 8 -Add the salt, basil, thyme, rosemary, and pepper to the broth.
Step 9 -Bring the broth to a boil.
Step 10 -Reduce the heat and simmer, uncovered, for 5 minutes.
Step 11 -In a small bowl, combine the cornstarch and water until smooth.
Step 12 -Stir the cornstarch mixture into the broth mixture.
Step 13 -Bring the broth mixture to a boil.
Step 14 -Cook and stir the broth mixture until thickened, about 2 minutes.
Step 15 -Serve the sauce with the pork.
