Your bowl will be overflowing with savory ramen noodles piled high with juicy chicken, and all your favorite cashew chicken fixin's and flavors in the blink of an eye. And the beautiful part? Just because it's an expedited version doesn't mean it's not as tasty. This Quick Cashew Chicken brings just as much flavor, satisfaction, and excitement as any other. Hurry up and grab your chopsticks! It's time to dig in!
Ingredients
- 2 tablespoons vegetable oil
- 2 chicken breasts, boneless and skinless, chopped into 2-inch pieces
- 2 packages chicken-flavored ramen noodles, including the seasoning packets
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 white onion, sliced
- 1 1/2 cups water, divided
- 4 tablespoons hoisin sauce
- 4 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1/2 teaspoon sesame oil
- 1 tablespoon garlic, minced
- 1/2 cup cashews
- green onions, to taste, thinly sliced
Directions
Step 1 -In a skillet, add the vegetable oil and the chicken and sauté until the meat reaches an internal temperature of 165 degrees F.
Step 2 -Transfer the chicken to a plate and cover to keep warm.
Step 3 -In the same skillet, add the ramen noodles and their seasoning packets, the red bell pepper, the green bell pepper, and the onion.
Step 4 -Add 1 1/4 cups of the water to the ramen mixture, cover, and cook over medium- high heat until the noodles are soft and the liquid has absorbed, about 5-8 minutes.
Step 5 -In a small bowl, whisk the remaining water, the hoisin sauce, the soy sauce, the rice vinegar, the sesame oil, and the garlic together.
Step 6 -Add the sauce, the cooked chicken, and the cashews to the ramen mixture and stir to combine.
Step 7 -Cook the cashew chicken until the cashews start to become tender, about 3-5 minutes.
Step 8 -Serve the cashew chicken garnished with the green onions.
