Ingredients
- 4 ounces angel hair pasta, uncooked
- 2 teaspoons cornstarch
- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons hoisin sauce
- 1 tablespoon fresh gingerroot, minced
- 1 teaspoon garlic, minced
- 2 tablespoons canola oil
- 1 pound chicken breasts, boneless and skinless, cut into strips
- 2 cups broccoli florets
- 1 cup carrots, julienned
- 1/4 cup salted peanuts, finely chopped, for serving
Directions
Step 1 -Cook the pasta to al dente, according to the package directions. Drain the pasta.
Step 2 -In a small bowl, combine the cornstarch, the soy sauce, the vinegar, the hoisin sauce, the ginger, and the garlic.
Step 3 -In a large skillet or a wok over medium-high heat, heat 1 tablespoon of the oil.
Step 4 -Add the chicken to the hot oil and stir-fry it until it is cooked through, reaching an internal temperature of 165 degrees F, about 5-8 minutes.
Step 5 -Transfer the chicken from the skillet using a slotted spoon.
Step 6 -Add the remaining oil and heat it until hot.
Step 7 -Add the broccoli and the carrots and sauté until crisp-tender, about 5-6 minutes.
Step 8 -Stir the sauce mixture and add it to the skillet with the vegetables.
Step 9 -Bring the sauce-vegetable mixture to a boil.
Step 10 -Cook and stir the sauce-vegetable mixture until thickened, about 2 minutes.
Step 11 -Stir in the chicken and the pasta and heat through.
Step 12 -Sprinkle with the peanuts and serve.
