Everything these days is done rather quickly... like oil changes, online shopping, and communicating. But cooking a good meal really doesn't adhere to this rapid, we-want-it-now kind of lifestyle. Most delicious meals come with a cost... of time, that is. Well, that was the case until we found this lightning-fast solution; Quick Spinach Pasta. The get-rich-quick creamy and cheesy spinach feverishly attaches to the slow-going al dente pasta for a quick-fire family favorite you will race to eat again and again. So, cut to the chase and quit wasting time, try Quick Spinach Pasta for an expressway type of meal the whole family will love! Being quick-on-the-draw for your next meal gives you time to haul (or relax, but that didn't rhyme)! Hurry up and take your sweet time... then enjoy!
Ingredients
- 1 (8-ounce) package penne, rigatoni, or spaghetti pasta
- 1 tablespoon olive oil, plus more, to taste, for serving
- 2-3 cloves garlic, finely sliced or minced
- 9 ounces baby spinach, washed
- 1/4 teaspoon fine salt, plus more, to taste
- 5 ounces cream cheese
- 1 ounce parmesan cheese, freshly grated, plus more, to taste, for serving
- 1/4 teaspoon ground nutmeg, or 1/3 teaspoon freshly grated nutmeg
- black pepper, to taste
Directions
Step 1 -In a large pot of salted, boiling water, cook the pasta to al dente, according to the package directions.
Step 2 -Reserve 1/2 cup of the pasta water, then drain the pasta.
Step 3 -In a large skillet over medium heat, heat the olive oil.
Step 4 -Add the garlic to the olive oil and cook until it is fragrant, about 1-2 minutes.
Step 5 -Gradually add the spinach to the garlic and season it with the salt, then cook, while stirring, until it is wilted, but still green.
Step 6 -Add the cream cheese and the reserved pasta water to the spinach mixture and stir to combine.
Step 7 -Add the parmesan cheese and the nutmeg to the spinach mixture, and stir to combine.
Step 8 -Add the pasta to the cheese mixture and toss to combine. Add more pasta water to loosen the sauce as needed.
Step 9 -Plate the pasta and top with the extra olive oil, the black pepper, and the extra parmesan cheese.
Step 10 -Serve.
