Smoky Summer Chicken Salad adds sunshine brightness to traditional chicken salad, so you’ll be craving it all season long! This dish has the perfect flavor combination of smokiness and freshness, full of delicious flavors like tender chicken, juicy cherry tomatoes, sharp cheddar cheese, and creamy, smoky dressing! Smoky Summer Chicken Salad is sure to become your go-to chicken salad for the hot weather months.
Ingredients
- For the chicken and vegetables:
- 1 pound chicken thighs, boneless and skinless
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved or chopped
- 1 cup sweet corn kernels, raw, grilled, cooked, or frozen
- 1/3 cup scallions, sliced
- 1/4 cup sharp cheddar cheese, grated
- For the dressing:
- 1/4 cup plain greek yogurt
- 1/4 cup mayonnaise
- 1 1/2 tablespoons lemon juice
- 1/4 teaspoon liquid smoke
- salt, to taste
- ground black pepper, to taste
Directions
Step 1 -Preheat the grill to the highest heat.
Step 2 -Season the chicken with salt, the pepper, and the garlic powder.
Step 3 -Brush the chicken with the olive oil.
Step 4 -Cook the chicken on the grill until fully cooked, reading 165 degrees F when tested with a thermometer, about 6 minutes on each side.
Step 5 -After cooking, allow the chicken to cool.
Step 6 -Shred the chicken with a fork.
Step 7 -Combine the chicken, the tomatoes, the corn, the scallions, and the cheese in a large mixing bowl.
Step 8 -Whisk together the yogurt, the mayo, the lemon juice, the liquid smoke, the salt, and the pepper in a small mixing bowl.
Step 9 -Toss the chicken mixture in the dressing until fully coated.
Step 10 -Serve on croissants or lettuce wraps!
