When it's a bit brisk outside, this Tomato Basil Soup will warm you up! This recipe transforms ordinary canned soup into something amazing, with an even deeper and richer flavor. Bright, comforting, and herby, Tomato Basil Soup is perfect for pairing with grilled cheese, toast, and baked potatoes. Winter’s withering grip won’t touch you with this wonderful soup on your spoon!
Ingredients
- 3 tablespoons olive oil
- 1 small clove garlic, minced
- 1 (10.75 ounce) can condensed tomato soup
- 1/4 cup bottled marinara sauce
- 1/2 (10.75 ounces) can water
- 1 teaspoon fresh oregano, or to taste, chopped
- 1/2 teaspoon ground black pepper
- 1 tablespoon fresh basil, plus more to taste, chopped
- 6 Italian-style seasoned croutons, plus more to taste
- 2 tablespoons parmesan cheese, grated
Directions
Step 1 -Heat the olive oil in a large saucepan over medium heat.
Step 2 -Saute the garlic in the hot oil until tender and fragrant, 2-3 minutes. Stir.
Step 3 -Stir the condensed tomato soup and marinara sauce into the garlic.
Step 4 -Slowly add in the water, using the empty can of condensed tomato soup.
Step 5 -Mix the oregano and black pepper into the soup.
Step 6 -Bring the soup to a simmer, then reduce the heat to low.
Step 7 -Cook until the flavors blend, about 15 minutes.
Step 8 -Stir the basil into the soup.
Step 9 -Ladle the soup into bowls and top with the croutons and parmesan cheese.
Step 10 -Serve.
