Ingredients
- 1 pound sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 large eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, thawed
- 2 cups cheddar cheese, shredded
- 1 1/2 cups 4% cottage cheese
- 1 1/4 cups Swiss cheese, shredded
- green onions, optional, to taste, sliced, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -In a large skillet over medium heat, cook the bacon and the onion until the bacon is crisp, about 5-8 minutes.
Step 4 -Drain the fat from the skillet.
Step 5 -In a large bowl, combine the eggs, the hash browns, the cheddar cheese, the cottage cheese, and the Swiss cheese.
Step 6 -Stir the cooked bacon mixture into the egg mixture.
Step 7 -Transfer the mixture to the prepared baking dish.
Step 8 -Bake, uncovered, until a knife inserted into the center comes out clean, about 35-40 minutes.
Step 9 -Let the casserole stand for 10 minutes.
Step 10 -Serve garnished with the green onions.
